Pear & Lime Salad

Pear & Lime Salad

16 oz. can of pears
3 oz. pkg of lime gelatin
8 oz. cream cheese, softened
8 oz. cool whip

Strain pears and bring juice to a full boil. Dissolve gelatin in the pear juice. Combine pears, cream cheese and 4 tbsp. of gelatin mixture in a blender and blend until smooth. Add remaining gelatin mixture and blend again. Refrigerate until soft-set and then fold in Cool Whip. Chill for at least 3 hours before serving.

Stuffed Chicken Breasts

2/3 c. hot water
2 Tbsp. margarine
2 c. Stuffing Mix, chicken flavor
1 ( 8 ounce ) can crushed pineapple with syrup
4 chicken breasts, boneless, skinless and halved
1/2 green pepper, chopped
1/2 red pepper, chopped
2 Tbsp. brown sugar
2 Tbsp. vinegar
1/4 tsp. ground ginger

Heat oven to 400 degrees F. Mix hot water and margarine in a bowl. Stir in the stove top chicken flavored stuffing. Add in the peppers, half of the pineapple and syrup. Spoon stuffing evenly on chicken and roll tightly. Secure with a toothpick. Place in a 8-9" square baking dish with the remaining stuffing in the center of the baking pan. Mix remaining pineapple, syrup, sugar, vinegar and ginger. Spoon over the chicken.

Bake for 30-40 minutes or until done.

Tofu Salad

1 lb. Tofu (firm)
1/4 c. soy mayonnaise
1 tsp. soy sauce
1 tbsp. mustard
1/4 c. onions, chopped
salt & pepper to taste
1 tsp. garlic powder
1 tsp. turmeric
lettuce & tomato (optional)

Drain, press and mash tofu. Mix remaining ingredients. Spread on whole-grain bread of choice. Add lettuce and tomato if desired.

Caramel Rolls Recipe

Preparation time: 20 minutes. Rising time: 1 hour. Baking time: 20 to
25 minutes at 375 degrees. Yields: 15.

3 to 4 c. all-purpose flour
1 pkg. active dry yeast
1/4 c. granulated sugar
1 tsp. salt
1 c. hot tap water (120 to 130 degres)
2 tbsp. butter, softened
1 egg

FILLING:

1/2 c. granulated sugar
2 tsp. cinnamon
1/2 c. butter, softened

TOPPING:

1 c. brown sugar, packed
1 c. whipping cream

1. In a bowl fo electric mixer, combine 1 1/2 cups flour, yeast,
sugar, salt, water, butter and egg. Beat 3 minutes at medium speed.
Stir in enough flour to make dough.
2. Turn onto lightly floured board. Knead 1 minute or just until
dough forms a smooth ball.

3. Roll out to a 15 x 7 inch rectangle.

4. For filling, combine sugar and cinnamon. Spread dough with butter.
Sprinkel with cinnamon-sugar. Roll up jelly-roll fashion from long
side. Seal. Cut into 15 slices.

5. Combine topping ingredients. Spread evenly into a 13 x 9 inch pan.

6. Place dough slices, cut side down, into pan. Let rise until
doubled, 35 to 45 minutes.

7. Bake at 375 degrees for 25 minutes or until golden. Immediately
invert onto serving board. Serve immediately.
